Petyo Dimitrov’s journey in mixology began at the European Bartender School in London, where he found a passion that would take him around the world. From Monte Carlo to Spain, Italy, and Australia, Petyo has honed his craft in luxury hotels and stylish cocktail bars. For Petyo, bartending is not just a profession; it’s a true calling. Inspiration
The inspiration behind ‘Salty Short’ stems from a cherished memory Petyo has of an English gentleman he met on his travels. This gentleman imparted a piece of wisdom that completely changed Petyo’s approach to gin-based cocktails:
“The best way to appreciate a gin is to pour it neat and savour it. As time passes, you’ll experience an evolution of flavours, Petyo said.”
Inspired by this advice and the unique profile of King Island’s Coastal Gin, Petyo set out to craft a cocktail that would honour and elevate the spirit.
His journey led him to Karkalla, a native Australian coastal plant that perfectly complements the gin’s mineral, salty essence. To add further depth, he incorporated two distinct preparations of organic Australian cherry tomatoes, creating a layered complexity in the drink.
To showcase the gin’s essence, Petyo curated an “orchestra of flavours and aromas”. Salty Short is Petyo’s ode to King Island Distillery’s Coastal Gin—a celebration of its terroir, where each ingredient has been carefully chosen to amplify and complement its unique character.

Salty Short Recipe
Ingredients:
• 50ml King Island Coastal Gin
• 7.5ml Maidenii Dry Vermouth
• 5ml karkalla brine
• 2.5ml vodka fat washed with sundry tomatoes and cherry
• Garnish: tomato tincture drops
Method:
• Stir 25 second and strain.
Picked Karkalla Recipe
Ingredients:
• 77g fresh karkalla washed
192.5g Brine Made by:
• 500ml water
• 25g salt
• 15ml White wine vinegar
• 5g muscovado sugar
• 1 bay leaf
• 2 juniper berry
• 1 lemon thyme
• 1 bay leaf
Method:
1. In a saucepan add water, salt, white wine vinegar, sugar, bay leaf, juniper and lemon thyme.
2. Boil everything at medium heat, and let rest for 5 min, once is cold strain.
3. In a jar put the karkalla, brine and bay leaf.
4. Store in the fridge.
Fat-Washe Vodka Recipe
Ingredients:
• 30g sun-dry tomatoes
• 30g cherry tomatoes
• 100ml vodka
• 1 tsp salt
• 7g sundry tomato oil
• 1 sprig of lemon thyme
Method:
1. Slow-cook the cherry tomatoes at 60c for 1 hour
2. Put it all together in a small jar and put it in the freezer to let it frost
3. Strain out solids with a coffee filter and store.
Tomatoes Tincture Recipe:
Ingredients:
• 50g sun-dry tomatoes
• 50g cherry tomatoes
• 200ml vodka
• 1 spoon salt
• 1 sprig lemon thyme
Method:
1. Slow-cooked tomatoes at 60c for 1 hour
2. Put all the ingredients together in a jar and let rest for 14 days out of the fridge and shake one for a day of the jar.
