A Deliberately Small-Scale Approach
On the remote island of King Island, surrounded by wild seas and rugged coastline, our production is proudly small scale. We mill our grain onsite to guarantee peak freshness. We use only filtered King Island rainwater - not just in distillation, but through fermentation to bottling. And with no automation on site, every stage of the process is done by hand. It’s not the fastest way — but it crafts spirits with exceptional quality.
By stripping production back to the essentials, we’re able to focus on what matters: flavour, quality, and integrity in every drop.

Sustainability at the Core
For us, sustainability isn’t an add-on — it’s embedded in how we operate. Our distilling process is designed to minimise waste and give back to the island we call home:
• Spent grain is repurposed as feed for local pigs and sheep.
• Treated wastewater is returned to the land, irrigating the surrounding paddocks where cattle graze.
• Hot water from the still is reused in our brewing cycles, reducing energy use and conserving resources.
It’s a closed-loop system that honours our environment — and ensures that our impact is as considered as our craft.
