Gidley Pinot Noir Gin is a celebration of the collaboration between King Island Distillery Bass Strait and Beautiful Isle Wines. Distilled using our signature Gidley Dry Gin recipe and steeped with hand-picked Pinot Noir grapes from Beautiful Isle Wines, this limited release delivers a vivid hue, velvety mouthfeel and elegant balance of juniper, citrus and soft berry notes. 

To highlight its versatility, we’ve created three distinctive serves — each capturing a different expression of the island spirit. 

Crimson Tide 

Elegant, textural and perfectly balanced — the ideal pre-dinner serve. 

Ingredients:

• 50ml Gidley Pinot Noir Gin 

• 10ml King Island Limoncello 

• 20ml Fresh Lemon Juice 

• 10ml Sugar Syrup 

• 20ml Aquafaba (or 1 egg white) 

Method:

Add all ingredients to a cocktail shaker and shake for 10 seconds. Strain into a coupette glass and garnish with a lemon twist. 

A silky, sunset-hued cocktail with bright citrus notes and a creamy finish — reminiscent of the King Island horizon at dusk. 

Island Fizz 

Light, refreshing and effortlessly coastal — perfect for warm afternoons. 

Ingredients:

• 50ml Gidley Pinot Noir Gin 

• 10ml Aperol 

• 60ml Prosecco 

• 30ml Soda 

Method:

Build all ingredients into a wine glass, adding ice last so the flavours blend gently. Garnish with a fresh sage leaf. 

Bright, sparkling and aromatic — a coastal spritz inspired by the island breeze. 

Noir Nightcap 

Smooth, rich and refined — the perfect evening companion. 

Ingredients:

• 55ml Gidley Pinot Noir Gin 

• 5ml Frangelico 

• 10ml Sweet Vermouth 

• 1 Dash Angostura Bitters 

Method:

Add all ingredients to a mixing glass and stir for 10 seconds. Gently strain into a Nick and Nora glass and garnish with an orange twist. 

Darkly smooth and subtly nutty, this after-dinner serve lingers like the warmth of a King Island night by the fire.
