At King Island Distillery Bass Strait, our ultra-premium Waterwitch Vodka is known for its exceptional smoothness, clarity, and purity. But beyond sipping and mixing, vodka has a secret talent: it makes an incredible addition to desserts.
Vodka’s clean flavour and alcohol content can intensify fruit, enhance texture, and add depth to everything from sauces to ice cream. Here are three simple, crowd-pleasing ways to turn your favourite spirit into your favourite sweet.
1. Waterwitch Vodka & Berry Sorbet
A refreshingly grown-up treat — no churn required.
Ingredients:
• 3 cups frozen mixed berries
• 2 tbsp honey or maple syrup
• Juice of ½ lemon
• 2 tbsp Waterwitch Vodka
Method:
1. Blend berries, sweetener, lemon juice, and vodka in a food processor until smooth.
2. Taste and adjust sweetness.
3. Freeze for 2–3 hours until scoopable.
4. Serve with a sprig of mint or shaved dark chocolate.
Why it works: Vodka lowers the freezing point, keeping the sorbet soft and scoopable — plus it enhances the berry flavour without overpowering it.

2. Dark Chocolate Vodka Mousse
Silky, rich and surprisingly light.
Ingredients:
• 200g dark chocolate (70% cocoa or higher)
• 2 tbsp Waterwitch Vodka
• 3 eggs, separated
• 2 tbsp sugar
• 1 cup whipped cream
Method:
1. Melt chocolate in a bowl over simmering water. Stir in vodka.
2. In a separate bowl, whisk egg yolks with sugar until pale. Add to chocolate.
3. Beat egg whites until stiff peaks form.
4. Fold whipped cream into chocolate mixture, then gently fold in egg whites.
5. Spoon into glasses and chill for 2+ hours.
Serve with: A small neat pour of Waterwitch Vodka or espresso on the side.

3. Vanilla & Vodka Macerated Strawberries
Elegant, effortless, and perfect over ice cream or pancakes.
Ingredients:
• 1 punnet fresh strawberries, hulled and sliced
• 2 tsp sugar
• 2 tsp Waterwitch Vodka
• ½ tsp vanilla extract
• Optional: cracked black pepper or basil for a twist
Method:
1. Combine all ingredients in a bowl.
2. Let sit for 15–30 minutes, until juicy and fragrant.
3. Spoon over Greek yoghurt, vanilla bean ice cream, or ricotta hotcakes.
Why it works: Vodka acts as a flavour extractor, drawing out the richness of the strawberries and enhancing the vanilla.
